🔥 Okanagan Veggie Foil Packets
A smoky, savory side dish (or main!) packed with fresh local flavor.

Ingredients
- 5–6 spears of fresh asparagus, trimmed
- ½ cup baby potatoes, halved
- ½ cup cherry tomatoes, whole or halved
- 2 tbsp olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
- Optional: a sprinkle of goat cheese or feta after cooking
- Optional: chopped fresh herbs (parsley, thyme, or chives)

- Lay out a large sheet of heavy-duty foil (or double-layer regular foil).
- Add the veggies to the center.
- Drizzle with olive oil and toss with garlic, salt, and pepper.
- Fold the foil into a sealed packet.
