A Fresh Spring Recipe: Lemon Blueberry Muffins 🍋🫐
Spring means fresh flavors, and what better way to celebrate than with some light, fluffy, and citrusy muffins? Perfect for road trip snacks or weekend brunch!

Ingredients
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¾ cup milk
- ¼ cup unsalted butter, melted
- 2 eggs
- Zest of 1 lemon
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, melted butter, eggs, lemon zest, and vanilla.
- Gradually add the wet ingredients to the dry, stirring until just combined. Gently fold in the blueberries.
- Divide the batter into the muffin tin and bake for 18-20 minutes or until golden brown.
- Let cool (or eat immediately because warm muffins are amazing). Enjoy!
