🔥 Okanagan Veggie Foil Packets

A smoky, savory side dish (or main!) packed with fresh local flavor.

Ingredients

  • 5–6 spears of fresh asparagus, trimmed
  • ½ cup baby potatoes, halved
  • ½ cup cherry tomatoes, whole or halved
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: a sprinkle of goat cheese or feta after cooking
  • Optional: chopped fresh herbs (parsley, thyme, or chives)

    Instructions:

    1. Lay out a large sheet of heavy-duty foil (or double-layer regular foil).
    2. Add the veggies to the center.
    3. Drizzle with olive oil and toss with garlic, salt, and pepper.
    4. Fold the foil into a sealed packet.
    5. Place on hot campfire coals or grill for 15–20 minutes, flipping halfway through.
    6. Carefully open (watch the steam!) and top with cheese or herbs if using.
